为了探索新疆民族特色乳制品中乳酸菌多样性及其生物膜形成情况,分别从新疆四个地区采集酸奶及酸奶疙瘩进行乳酸菌的分离,共获得110株乳酸菌,通过生理生化检测及分子生物学手段对其进行物种鉴定,并采用微量板半定量法对其生物膜形成能力进行检测。结果显示,戊糖乳杆菌[Lactobacillus pentosus(L.pentosus)]为优势种(占总分离株的48.18%),其次为副干酪乳杆菌(L.paracasei)(25.45%);在所分离的乳酸菌中,63.64%表现出形成生物膜的能力,且全部为乳杆菌;优势种群中81.13%的L.pentosus及64.29%的L.paracasei生物膜表型为阳性,这为开发利用乳酸菌资源及其生物膜特性奠定菌种基础。
Abstract:To explore the diversity and the biofilm formation in dairy products from Xinjiang ethnic characteristics,110 Lactic acid bacteria( LAB) were isolated from yogurt and yogurt lump collected from four regions in Xinjiang. Physiological and biochemical detection and molecular techniques were used to identify them and then micro- plate semi- quantitative method was used to detect the ability of biofilm formation. The results showed that Lactobacillus( L.) pentosus were dominant species( 48. 18% of the total isolates) and followed by L. paracasei( 25. 45%); 63. 64% were biofilm positive and all of these were Lactobacillus 81. 13% of the L. pentosus and 64. 29% L. paracasei were biofilm positive. These provided strains of this kind of microbial for the development and utilization of LAB resources and their biofilm characteristics.
