压榨法和浸提法制备阿克苏温185核桃油的研究

以阿克苏的温185薄皮核桃为原料,对压榨法及浸提法制备核桃油的工艺进行了研究,并对两种方法制备核桃油的物理性质进行了简单分析。试验结果表明:在205℃下压榨制备核桃油,出油率可达49.8±0.34%,并且可获得质量较好的核桃粕;浸提法的最佳工艺为液料比8.5:1、浸提时间6h和浸提温度57.5℃,其出油率可达62.44±0.53%;两种方法制备的核桃油的物理性质极为相似,然而浸提法的出油率显著高于压榨法,但浸提法的油和粕都存在着溶剂残留问题。

Abstract:

Using Aksu's Wen185 walnut as experiment material,the pressing and extracting technology of walnut oil were studied.In addition,the physical properties of oil and mill between pressing and extracting technology were also analyzed.The experimental results showed that the oil yield of pressing technology could reach 49.8 ± 0.34% under 205℃,the optimal condition of extracting technology was liquid to material 8.5:1,extracting time 6h,extracting temperature 57.5℃,and the oil yield could reach 62.44 ± 0.53%.Although the physical properties between two technologies were similar,the oil yield of extracting technology was evidently higher than the oil yield of pressing technology.However,there was a main problem,which has residual solvent of oil and mill.
